Award-Winning Pork Pies

The pork pie, raised by hand.

A proper British pork pie — seasoned pork in a sturdy hot-water crust, set in savoury jelly — made the way it should be, right here in Ontario.

The pork pie is one of Britain’s quiet institutions: a domed, golden pastry case packed with seasoned pork, cut cold and eaten standing up at a fair, a cricket match, or the edge of a kitchen counter. It isn’t fussy. It’s honest food, built to be carried in a pocket and shared without ceremony — and when it’s made well, there’s nothing else quite like it.

Ours are hand-raised the traditional way, and they’ve won awards for it. If pork pies are new to you, here’s the short of it: firm, savoury pastry around a core of coarsely seasoned pork, with a thin layer of clear savoury jelly filling the gap between meat and crust. That jelly is the mark of a proper pie — a sign it was made by someone who knows the craft.

3” Pork Pie

Award-winning pork pie, sized for one.

Seasoned pork encased in hand-raised hot-water crust pastry and set in a thin layer of savoury jelly, in a neat single-serving size. Our award-winning recipe, made the traditional way for a snack that eats every bit as well cold as it does with a spoonful of proper pickle. Small, handsome and endlessly moreish.

What it is: A pork pie is a British cold-eating pie: seasoned minced pork baked inside a sturdy hot-water crust pastry with a layer of savoury jelly, traditionally served cold with pickle.

5” Pork Pie

Our award-winning pork pie, sized to share.

The full-sized version of our award-winning pork pie: seasoned pork in a hand-raised hot-water crust, finished with a thin layer of savoury jelly and a deep, golden shell built to be shared. Cut it into generous wedges for the table, a picnic or a pork-pie-and-pickle spread done properly. Hearty, traditional and made the way it should be.

Hand-raised, the way a pork pie is meant to be

“Hand-raised” isn’t a marketing flourish — it’s a method. The hot-water crust is worked warm and shaped by hand around the filling, so the pastry stands tall and holds its own without collapsing. It’s slower than pressing dough into a tin, and you can taste the difference.

The result is a case with real structure: crisp and golden outside, sturdy enough to cut clean and carry, tender enough to give way to the pork inside. This is old-fashioned pastry work, and we do it properly.

02

Proper hot-water crust and a layer of jelly

Two things separate a real pork pie from an imitation, and we get both right. The hot-water crust — pastry made with hot fat and water rather than cold — is what gives the pie its firm, savoury shell. The jelly is a light, clear savoury set that fills the space between meat and pastry as the pie cools, keeping everything moist and holding the whole thing together.

Together they make a pie that eats beautifully cold: dense seasoned pork, a crust with bite, and that unmistakable savoury jelly that tells you it was made by hand, not a machine.

03

Two sizes, for one and for the table

Our award-winning pork pies come in two hand-raised formats — a smaller pie for one and a larger pie for sharing.

Reach for whichever the occasion calls for: a quick lunch and a spot of pickle, or a centrepiece for a spread.

  • 3-inch pork pie — the individual size, perfect for a lunchbox, a picnic or a proper pub-style lunch with pickle and a sharp cheese
  • 5-inch pork pie — the larger sharing pie, cut into wedges for a buffet, a gathering or the Boxing Day table

How the British eat it

Cold, always — a pork pie is a cold pie. Cut it into wedges and serve with English mustard or Branston-style pickle (a tangy, chunky brown pickle that’s the classic partner), a wedge of mature cheddar, and a handful of salad.

It belongs on a ploughman’s plate, in a picnic hamper, on a Boxing Day cold table, or wrapped up for the road. Once you’ve had a proper one, it becomes a habit.

For pubs, caterers and venues

Our pork pies travel well and hold beautifully on a counter, which makes them a natural fit for foodservice. Pubs put them on the bar menu with pickle and chips; caterers build them into ploughman’s boards and grazing tables; delis and legions sell them by the pie.

We supply venues across Ontario alongside the rest of our bakery and butchery. For volume orders, both sizes are available in wholesale formats — contact us for wholesale pricing and available case formats.
