The Breakfast Table

Square Sausage, the Way a Morning Should Start

A sliced, seasoned Scottish breakfast sausage cut square to sit neatly in a roll — now in two much-loved styles across our nine Ontario stores.

If you grew up in Scotland, you already know the smell: square sausage under the grill on a Saturday morning, edges just catching, waiting for a warm floured roll and a smear of brown sauce. Also called Lorne sausage, sliced sausage or simply “a slice,” it is a breakfast sausage shaped into a square rather than a link — sliced thick so it browns beautifully and fills a roll from corner to corner.

For anyone meeting it for the first time, think of it as the missing piece of the full fry-up: soft, well-seasoned and made to be eaten flat, more tender than a banger. We now offer it two ways — our long-loved Crawford’s sliced sausage that Ontario families have picked up for generations, and a new, more traditional Lorne. Both have a home on our counter.

“A roll and slice on a Saturday morning — that is not just breakfast, it is a memory you can taste.”

Scottish Sliced Sausage

The Crawford’s slice Ontario has loved for generations.

The much-loved Crawford’s sliced sausage, a flat, square-cut breakfast sausage that Ontario families have reached for across generations. Well seasoned and just the right thickness, it fries up quickly and tucks perfectly into a buttered morning roll with a splash of brown sauce. A genuine taste-of-home favourite, now sitting proudly alongside our new traditional Scottish-style Lorne sausage so you can enjoy both.

What it is: Scottish sliced sausage is a flat, square-cut breakfast sausage, fried and served in a soft morning roll. Crawford’s is the long-established version many Ontario customers grew up with.

Lorne Sausage

The traditional square sausage, beef and pork.

Our new traditional Scottish-style Lorne sausage, a flat square slice made with a proper beef and pork blend, closer to the version you’ll find across Scotland. Well seasoned and made for the pan, it colours up beautifully and belongs in a soft morning roll with a little brown sauce. A more traditional square sausage that sits happily alongside our long-loved Crawford’s slice.

What it is: Lorne, or square, sausage is a flat square-cut Scottish breakfast sausage. This one uses a beef and pork blend, the style commonly found across Scotland, and is fried and served in a morning roll.

What Square Sausage Actually Is

It goes by many names — Lorne sausage, sliced sausage, slice sausage, or just square sausage — but it is all the same Scottish morning staple. Instead of being packed into a casing, the seasoned meat is pressed into a loaf and cut into thick, even squares.

That square shape is not a gimmick. It is the reason it tucks so tidily into a morning roll, and the flat sides give you more surface to crisp under the grill or in the pan. One slice, one roll — made for each other.

Crawford’s Sliced Sausage — the One Ontario Grew Up On

This is the slice generations of our customers have carried home from our counters. Our Crawford’s sliced sausage has been a fixture of Ontario breakfasts for years — the familiar, comforting taste people ask for by name and keep coming back for.

There is nothing dated about it. It is a proper, well-seasoned square sausage that browns up a treat and belongs in your roll on a Saturday morning. For a lot of families here, this is simply what square sausage tastes like — and we are keeping it exactly as it should be.

New: Our Traditional Lorne Sausage

Alongside the Crawford’s, we are introducing a new Lorne sausage for those who want the style you would find right across Scotland. Lorne is the traditional name for square sausage, and ours is made with a beef and pork blend — closer to the classic Scottish recipe and its characteristic savoury, gently spiced flavour.

It is not a replacement for the Crawford’s — it is a second choice on the counter. Some will stay loyal to the slice they have always known, others will want the more traditional Scottish take. Now you can have either, or both.

  • Crawford’s sliced sausage — the long-standing, much-loved Ontario favourite
  • New Lorne sausage — a traditional Scottish-style square sausage made with a beef and pork blend
  • Both cut thick and square for the morning roll and the full fry-up
  • Two distinct products, both worth a place on your breakfast table

Made for the Morning Roll and the Full Fry-Up

A roll and slice is Scotland’s answer to breakfast on the go: a soft floured roll, a square of sausage cooked till the edges catch, and whatever sauce you swear by — red or brown, the debate never ends.

It is the fry-up’s quiet hero too, sitting alongside British bacon, a fried egg, beans and a good pot of tea. Whichever slice you choose, grill or pan-fry it a few minutes each side until golden and cooked through — breakfast is done before the kettle has finished.

  • Grill or pan-fry a few minutes each side until golden and cooked through
  • Serve in a warm morning roll with brown or red sauce
  • Build it into a full fry-up with bacon, egg and beans
  • Sold fresh in packs of six generous slices (6 x 75g)

Good to know

Questions, answered

Lorne sausage is the traditional Scottish name for square sausage — a seasoned breakfast sausage pressed into a loaf and cut into thick square slices rather than filled into a link. It is made to sit flat in a morning roll and to fry up as part of a full breakfast. Our new Lorne is made with a beef and pork blend, closer to the classic style you would find across Scotland.

They are two distinct products, and both are proper square sausage. Our Crawford’s sliced sausage is the long-standing recipe Ontario families have loved for generations — the familiar taste many people ask for by name. Our new Lorne sausage is a more traditional Scottish-style take, made with a beef and pork blend that is closer to the recipe commonly found across Scotland. Neither is more “correct” than the other — it comes down to which flavour you grew up on or fancy trying. You will find both on our counter.
